An essential accompaniment to Santorinian salad and a great friend of fava beans, capers are not missing from any truly Santorinian dish. They are a wild shrub that grows on the slopes of the caldera, on the terraces of the fields, on dry stone walls and generally in rocky places, since, as they say in Santorini, “the caper is planted by the ant”. They are collected from the end of spring and throughout the summer and from its branches come the caper buds (the flower before it opens) and caper leaves. After they have become bitter, in water that is changed regularly for at least a week, they are pickled with vinegar and salt. The caper buds are dried to be used in various dishes.
