In late Spring and early Summer, capers make their appearance on all the Greek islands, but are mainly found on the scattered, dry islands of the Cyclades. One can see them everywhere sprouting from rocks and walls, blooming along the road, waiting for someone to pick them.
In the sunny land of Kythira they gather the wild caper in the Spring and preserve its flower in brine to have this precious appetizer of nature on the table all year round. Ideal for country salad, potato salad, pasta sauces, mayonnaise and marinades, grilled fish, fava beans, tartar sauce, tacos, etc.
